Which report would I use to get the quantity and value of the sales of a particular item?

While there will be other info shown as well, the Sales History report from Inventory will do this.

Inventory module | Reports | Price/Sales Analysis Reports | Sales History.

Select the particular item and make sure the "Consolidate items to each selected period" is UNchecked. You can also uncheck any periods that you are not interested in.

After all that... Here's hoping the figures look good :-)

The best place to get sales reports such as this is by using Adagio Sales Analysis.

You will be able to get the most detailed sales figures by using Adagio SalesAnalysis. However, you can see the quantities sold on the Sales History report by turning "off" the consolidation option.
