Are the fields Current, 1-30, 31-60,61-90 suppossed to be filled in in the customer profile transactions window? If so, how?

Yes, under the Customer/Statement tab (the statement options section). The numbers can be overridden at print time.

And when you visit the Customer / Transaction tab, there is a Calculate button that fills in the Aging for you. Initially the aging fields at the bottom of the screen are blank.
