How do the users change the printer to the alternate printer? Do they visit the File / Workstation Options, or do they click the Setup button while they are on the Print Invoice screen?
If they change via the Workstation Options, this changes the default from the old printer to the new printer, and saves the change in the Windows registry. Their old default printer is no longer the default. This is not the correct method of redirecting a one-off print job to a different printer.
If they change via the Setup button, this should not make any changes to the Windows registry and the default printer setup for a particular specification. I could not replicate a problem when using the Setup to redirect printing invoices to a different printer - the Workstation Options default remained unchanged and printing another invoice correctly chose the original printer.
Please let us know in the case they use the Setup button to print an invoice (or other document type or a report), if they then open File / Workstation Options, has the default printer changed there?
Is the new server a Terminal Server?
