The date that a Period End is performed would not affect how the batch numbering is defined. Rather, when Year End Processing is performed, the batch number should be reset to 1.
Year End could not have been run if you had any open batches. So one of two possible scenarios is the culprit:
1) 5 batches did not get cleared from the batch status files, meaning the next batch you create would be #6.
2) The batch status files did clear correctly, but batch data files numbered 1 through 5 that shouldn't have existed were there, so that when you created a new batch, the first 5 numbers were skipped and #6 was used.
In short, there isn't a way to override the batch numbers, unless you are willing to restore data from an old backup, determine the cause of the numbering issue, and re-do your year end.
If you print/preview the batch status report for all available batches (found under the Reports menu), perhaps this will give a clue as to how the first 5 batch numbers were handled.
