Quik Invoice cannot sort items before printing them on the invoice. You must enter them on the invoice in the order you wish them to appear on the invoice - then insert an item subtotal to subtotal them prior to entering the next group of items.

Quik Reports can sort based on values and amounts. If this feature is important, perhaps you should look into QR as a partial solution to your goal.
