Occasionally it can be useful to know the date and time and possibly user that posted a given order or invoice. Is this available in Adagio?

What version of OrderEntry are you using?

In OE8.1B, we've added a number of new spec codes including ones that would report the user that created or modified the document, as well as which user printed which kind of document.

OE v8.1B should give you all of the date and time stamps you will ever need.
