During the webinar on AP I made note that you can print cheques and complete the amount later, however I neglected to note how to do that. Can someone help me out. The prime example is a cheque to Canada Post for stamps, etc. where the amount is unknown.

Under Edit | Banks | Series turn on "Allow blank check stock". You'll then be able to print out a blank check from the Reports Menu.
