It seems we have fallen behind quite a bit with the upgrades/service packs and we were wondering if we would have to upgrade 1 version at a time or if upgrading to the latest version would suffice.

You can just Upgrade to the latest version. Your data should convert without incident (although I'd recommend a test conversion on a copy of your data before going live). Also, carefully review the release notes to see what might need attention after the Upgrade. Depending on the version and modules you are Upgrading from, you may need to make minor adjustments to your financial statements and/or form specifications.
