I was just wondering if there was a way to set custom colors in order entry and set them by sales person, so one would be say blue another sales person would be yellow etc.

Do you mean that when you look at the on-screen list of Orders or Invoices or Credit Notes that the individual rows would be coloured to indicate the salesperson?

If so, you can do that with Filters. Create a Filter for each salesperson and use a different colour for each.
