I am trying to run a demo of Purchase Orders 8.1A using my ACCPAC Plus data from Inventory Receipts Rel #2.1 (970620)
When I try to open I get an error "Day end processing was not completed. Data may be damaged. Recover from backup."
Can I change that flag somewhere to make this work?

Your IR data must be version 6.5 or higher.

Make a backup of your IR data (perhaps copying it to another folder), then do the Day End in the new folder. After, open the IR data in the new folder with PO.

Note that PO requires that GL and AP data also exist.

Converting IR to POA requires that a day end be run first. Likley the error message is just not correctly reflecting the issue. You cannot just change the flag.

It looks like my Inventory Receipts Rel #2.1 (970620) is version 6.1B
Day end was run, so I guess it can't read the older version data.

Following from the above comments, you will need to upgrade the IR 6.1B Release 2.1 vintage 97!, to evaluate the Adagio PO module. We have a utility that will allow you to convert a copy of your data (within Plus) but you really want to do this on a copy of your live data to see the beauty of Purchase Orders for Adagio. (I'm biased). There are too many features and benefits to not look at this POA software if you already have DOS IR.
