Before answering your questions, I would like to recommend that you find an Adagio consultant in your area. These are the kind of questions that assume a pretty high level of knowledge about Adagio. A good consultant would be able to help not only with these installation issues, but with other similar issues that you didn't ask about but will probably experience.

You run a workstation install not from the server but from each workstation. There is no need to formally uninstall Adagio from the workstation - simply rename the \SOFTRAK folder to something \SOFTRAK_OLD, and then a month or a year later (after everything is working OK) delete the \SOFTRAK_OLD folder.

The data folder must be on the server. It doesn't matter when you copy the data. I wouldn't copy the folder, but rather the files within the folder - all the files that share the same extension.
