I also use Office 365 (2016), and when I email forms via MAPI, I see the sent emails in my Sent Items folder in Outlook.

We are unaware of any problems in this area. You will need to discuss this with your Adagio consultant, as it will be difficult to troubleshoot this situation over a support forum. Maybe there is an email setup portion that is not completed, in either Adagio or Office.
