The 'IR Detail History Composite' is a combination of both the 'IR Detail History' and 'IR Detail History Additional'. The 'additional' file contains only fields related to integration with Adagio JobCost. If you do not use Adagio JobCost with Purchase Orders, then both the 'IR Detail History' and 'Composite' tables are effectively the same. 'Composite' tables are a conglomeration of two or more related tables and will always have the most information available.
If you want to investigate what fields a GridView dictionary table contains, you can use the DataDictionaryExporter.exe utility to create an Excel spreadsheet for a specific dictionary, and every table is on a separate sheet - with a field listing, data file names, translation lookup tables and more. If you use GridView regularly and create views, this is an invaluable tool to locate where fields are stored in the dictionary.
