Every company handles inventory slightly differently, so it is difficult to design a course that would allow someone to "learn and understand it completely" - that's really a function of the kind of inventory you are managing, and the kind of reporting you need out of inventory at the end of the month.

Also, "managing inventory" often means creating purchase orders and buying inventory, rather than just recording receipts, transfers, andjustments and shipments.

I'd recommend turing to your Partner first, to make sure that the basic steps needed in your business are covered.
