I believer you're referring to the SmartFinder window. What category are you referring to? Are you able to use the Column Editor?

If so, double click on the column headings. On the Column Editor window that displays, scroll down the left side and find the field for the 'missing' information. Highlight the field and use the right arrow button to move it to the right side or the selected fields box. You can also the field on the right side and use the up and down arrows to position it in the order you wish to see it in.

It is also possible to 'Set this view for all users'.
